soya lecithin aid in viscosity adjustment by reducing friction between small solid particles dispersed in a liquid due to its active molecules, it basically behaves in an amphiphilic manner. This means that one end of the molecule is lipophilic (Oil- friendly) while the other is hydrophilic (strong affinity towards water). The combination of these two opposing properties gives lecithin countless interesting priceless benefits.

Lecithin is a complex mixture of different phospholipids. Lecithin can be derived from different sources like Soybean, Sunflower, Egg, Milk etc. Majority of lecithin comes from Soy and its typical composition is:Lecithin, a lipid material composed of choline and inositol, is found in all living cells as a major component of cell membranes, which regulate the nutrients entering and exiting the cell.   • Phosphatidylethanolamine (PE) 8 – 20 %
  • Soy Oil 33 – 35 %

 

The main function of lecithin is to stabilise cell membranes, stimulate a variety of metabolic processes, support liver cell regeneration and many more. The most important is Phosphatidycholine, our body makes a chemical called acetylcholine from phosphatidylcholine. Acetylcholine is important for memory and other functions in the body.
